All you need to know about THE CONSCIOUS BAKER

“It all started with the thought of providing healthy, nutritious and tasty food without letting go of either of the characteristics”, Akshay Sandu, Co-founder, The Conscious Baker

The Conscious Baker, a food start-up that makes No Refined Flour and No Refined Sugar products and provides an end-to-end solution for all the dietary needs without compromising on nutritional values. A one-of-a-kind bakery with all offerings diabetic-friendly, no sugar in any form (no honey, no jaggery etc.) no refined flour and everything made from scratch.

Tamara, (co-founder and business partner) and Akshay noticed the gap in the market for a truly healthy bakery because according to the, what normally happens in India is that people tend to hide a lot of ingredients. The basic rules for packaged food are very lax, and there’s also a general lack of awareness about what goes into the making of a product, especially packaged foods. “We wanted to change that perception. While it’s easy to hide an ingredient or two from your buyer, compromising on the overall quality of our offerings just for better business doesn’t appeal to either of us. Desserts needn’t always be your cheat meal. We offer the healthiest possible desserts while still maintaining the taste. And, that’s the USP of the Conscious Baker.

About the Founders

Albeit hailing from a finance background, fitness has always been Akshay’s calling.  On a personal front, he always wanted cleaner ingredients in his diet and would like to offer the same to customers too.  Prior to her foray into the food and beverage entrepreneurial bandwagon, Tamara Dzousa had a decade and-a-half-tryst with the hospitality sector. Brands like Della resorts, La folie, and Provenance, along with a few homegrown brands in New Zealand fall under her list of clienteles.   

The Journey

The founders started their journey in June 2019 with the launch of their first retail outlet Protein Rush – A 360-degree fitness café, serving sugar-free, refined flour-free, high protein meals ranging from pizzas to salads to protein shakes. The aim was to offer a healthy twist on all the traditionally frowned upon unhealthy but tasty dishes. The cafe was crowned “The Best Health Food Cafe” in the eastern suburbs at the coveted Times Food & Nightlife Awards 2020. Continuing this journey towards providing a complete solution for healthy food, they launched The Conscious Baker in March 2020, an end-to-end solution brand for all dietary needs without compromising on nutritional values and taste.

Bottlenecks in the journey

The venture was started in the midst of the early pandemic, the consequences of which were to shut down the business by the end of March 2020. They were forced to make a few necessary changes like re-working on the business strategy as per the industry situation at that time. The blessing in disguise was the amount of R&D that went into understanding the market &  product sampling led them to focus and invest more in the chocolates. Realising the dearth in the availability of healthy desserts, they decided to foray into the arena of desserts.  Technically, desserts cannot be healthy, but, can certainly be made a lot healthier than what’s currently being offered in the market.

The USP

“Our products are the USP and we take pride in offering the widest range of Chocolates.” Most of our products have a good amount of shelf life. The chocolate used in our products is made in our chocolate lab from pure organic cacao beans, sourced from the very best south Indian plantations. The resulting chocolate is Sugarfree (Maltitol free), Vegan , Keto , Gluten-free and ready to go into your favourite bakes. This makes us the only brand that makes its own chocolates to be used in desserts, allowing us to experiment with our products/offerings in a completely unique way. 

The Mission

Our mission is to gain maximum visibility and would like to cater to the different age groups of people. What we want for our consumer is to dig into a gooey cake slice or chocolates and not feel guilty about it.  We want to tweak the concept of guilty indulgence and make the idea of sinking your teeth into your favourite dessert a more fulfilling, and blissful experience.

Pahaadi Organics – an organic venture by a 16-year-old

Aryan Kaistha, a 16-year-old, class XII student living in a village called Naggar just 20km from Manali, started Pahaadi Organics in May 2021.

“I was inspired by such similar ventures promoting healthy organic food of the hills and decided to start one myself during the COVID 19 lockdown of 2021.  My goal was to help the small traditional farmers as well as to provide chemical-free and healthy food to our customers from cities where such products are rarely available. So I decided to buy my produce from villages and small farmers to help them out during the lockdown since they didn’t have much income during that time”, says the young entrepreneur.

I found many farmers who grew things like rajma and red rice using traditional methods without any chemicals, instead using organic fertilizers like cowdung and compost and I decided to start with that. I also found a very rare type of honey here which was collected from traditional Himalayan beehives. They are of 2 types, one is a hollowed out log and the second is a box attached to the wall of the house. This honey is really dense and tasted like nothing I’ve ever had before. My customers loved it too. 

Soon, I added himalayan ghee for which demand was quite high. Our ghee comes from Himalayan cows which are kept in traditional himachali households for cowdung to use as fertilizer and milk, from which ghee is made using traditional methods. We don’t buy any of our produce from farms but instead, we go house to house looking for it. For example our ghee is collected in little quantities from local villagers who keep some cows at home for personal needs and to sell the surplus.

Currently, he is handling all of it himself with some help from his dad, who helps in finding the produce in villages.

The main challenge, in the beginning, was to get my first customers but after that, as the brand grew, it became easier. 

Slowly, I started distributing some of my products in shops around my place and we got quite good feedback from there as well. Now I am also planning to add different kinds of local nuts and dry fruits for sale as well.

This year I also tried to sell some organic fruits like persimmons and some apples which went quite good! Although people didn’t know much about persimmons and they are not available in states other than Himachal and Uttarakhand and they were trying them for the first time. They absolutely loved them! “So for next year I can expect to get more orders as people tasted them and know what they are already”, says the bullish young kid. Next year I am also planning to introduce other fresh fruits like plums, pears and apricots.

What’s more, this young chap has also created the website on his own by learning it online. And his future plan is to expand his business to benefit as many farmers and customers as possible.

Neenu’s Natural creates healthy snacking options, energy bars, mind-blowing masalas, pickles and sweets, made  using only natural ingredients, zero added chemicals, no artificial colours or flavours! Handcrafted and made with the use of whole grains, Himalayan Pink salt, no refined sugar or unhealthy oil, their products will nourish both, body and soul.

The products are nicely packaged in glass jars, and for special occasions, there are beautiful gift packs also available.

Neenu and Ankur – the Yoga and Ayurveda enthusiasts, Started this in December 2017, with just two products. Today, they have grown to offer an extensive range of products to their customers. All the food is made in-house with natural products and mother’s love. “From our hearts to your homes”, says the talented mom-son duo.

Energy bars are full with the goodness of dates and nuts. Individual bite sized portions make them the anytime snack for all ages.

GOND LADDOO

Prepared with gond, whole wheat atta, pure cow’s ghee, unrefined sugar, and lots and lots of nuts. With the superfood gond, this is the perfect dose of health for all ages.Combine this with a glass of milk and this is a great healthy evening snack for kids.

BESAN LADDOO

Made up of besan, that’s hand-roasted to perfection, pure cow’s ghee, unrefined sugar, gond and lots and lots of nuts.

SATTU LADDOO

Sattu laddoo is made using the Indian protein powder – Sattu, jaggery, pure cow ghee and lots of nuts.Combine this with a glass of milk and this is a perfect evening snack for kids.

RAGI FINGERS

Ragi is a powerhouse of calcium and is a great snack for all ages – adults and kids alike, as it balances health with taste!

WHOLE WHEAT JAGGERY FINGERS

Goodness of whole wheat with a sweet jaggery coating. This is crispy, healthy and versatile.
